Opthimus 15y Single Malt Finish

Origin: Dominican Republic

Alcohol content: 38%

The Opthimus Rum from the Dominican Republic matured for at least fifteen years in ex-Bourbon casks and then received an extra 18 months of maturation in a used Tomatin single malt Scotch whiskey cask. With this rum, the house of Oliver & Oliver, based in the Dominican Republic, proves once again that they have mastered the craft of rum production - after all, the roots of the company are in Cuba. But Oliver & Oliver also approach this in a very special way: They buy high-quality rum, blend it and then let it mature in their bodegas using the Solera system.

02

Native Authentic 20y

Alcohol content: 40%

The Rum Nativo Auténtico 20 Años is an aged ron grown from sugar cane in the mineral-rich volcanic soil of the Herrera region of Panama. The line of Autentico Nativo Rums are distilled in 100 year old copper and brass stills at Las Cabras Distillery. The sugar cane is hand-picked and fermented on-site by a certified rum master and distilled in old copper columns dating back to 1922. The Nativo Rum slumbers in American ex-Bourbon oak barrels, which give the Auténtico Nativo 20 Años the finishing touch. The casks undergo a baptism of fire to revive the trapped compounds of previous generations of rum.

08

Minoki Mizunara Cask Finished Rum

Origin: Japan

Alcohol content: 40%

This is not only the world's first Mizunara matured rum, but also a special filtration - the distillate is filtered from coral - the rainforest of the sea. Mizunara is the noblest type of oak, which grows particularly slowly between 150 and 200 years in the Hokkaido region in Japan and is processed into barrels in a very complex manner - since this special type of oak does not grow straight, each stave has to be reinstalled up to three times until a complete and tight barrel arises. This makes Mizunara Oak the most expensive wood in spirits production.

Tasting Notes:

Nose: fruit, sweetness, vanilla

Gaumen: Apfel, Kokosnuss, tropische Früchte, vollmundige Fruchtsüße

Abgang: lang, sanft und seidig, Vanille, etwas Pfeffer

09

Ron Malteco Suave de Panama 15 YO

Origin: Panama

Alcohol content: 40%

An interesting rum that does not carry its opulence in front of it, but wants to be developed in a qualified manner. In contrast to the widespread and moderately interesting candy bombs that weigh heavily on the tongue, it surprises with a fine, almost tingling mouthfeel. It quickly unfolds a keyboard of exotic fruit aromas, fine wood notes and piquant aspects of iodine and salt, which would probably have earned a Scotch the title "like salted caramels".

Tasting Notes:

Nose: soft and sweet

Palate: soft and persistent, pleasant sweetness, aromas of chocolate and some vanilla

10

Red Beard Sailor's Choice Organic White Rum

Herkunft: Schweiz

Alcohol content: 44%

The sailors of the Red Beard crew each filled a few bottles of rum in the Caribbean before it was filled into the barrels for transport. The men believed that the pure, white rum brings a pure soul, which is why they preferred it on their wild sea voyages. Today, the Sailors Choice is a wonderfully soft and fruity rum, which is ideal for mixing high-quality cocktails. The Red Beard Rum is the reincarnation of the rum of the Red Beard Crew. According to legend, the notorious rum smugglers shipped liters of rum from the Caribbean to Switzerland. Today, however, only the sugar cane molasses is imported and the rum is distilled in Switzerland. The credo of the then Captain Balthasar still applies today: "High-quality rum for discerning palates". All our Red Beard Rums are organic and meet the requirements of the Swiss "Organic Ordinance".

Tasting Notes:

Nase: Süss, mit tropischen Früchten wie Ananas im Vordergrund, etwas Süssholz, Himbeere, Sauerkirsche und karamellisierte Mandeln gesellen sich dazu

Palate: light and smooth, beautifully sweet, with tropical fruitiness, blackberries, raspberries, passion fruit, marzipan and dried fruit

Finish: medium length, sugar cane, very ripe berries, slightly nutty and floral

For those who are not very familiar with Philippine botany: Calamansi is an orange, Siling Lubayo is a local chilli variety. MacNair's Exploration Rum Jamaica Peated

Expertly blended and reduced to 69% ABV, the spirit was restaged in casks previously aged with peat brandy distilled at GlenAllachie to add a distinctive smoky note. Rum Wissen

Did you know?

The first distillation of rum occurred in the 1620s when Caribbean sugar plantation slaves discovered that molasses, a by-product of sugar refining, could be fermented into alcohol.

The word rum... is probably derived from the English dialect word rumbullion for "riot" and "tumult".

Rum is made from... the molasses of the raw sugar, not from the sugar cane juice as many people think. Molasses is a chewy, dark brown sugar syrup. However, a small part of the rum production is made from freshly squeezed sugar cane juice. The name for this type of rum comes from the French overseas territories and is called Rhum Agricole.

The word Meleasse... comes from the late Latin "mellacium" and means "thickened wine, cider syrup" and "mel" for honey.

What is the minimum alcohol content in rum? Rum always has a minimum alcohol content of 37.5 percent. Pampero Ru, for example, is made with water from the in-house spring. Without the spring water, the rum distillate would have an alcohol content of 65 to 75 percent.

What about white rum? White rum is either stored in steel casks or, like Pampero Blanco, is charcoal filtered after aging in wooden casks. This removes strong wood notes and gives it its fresh and fruity taste.

Rum not just for drinking? In the 19th century, rum was valued as a beauty product for its ability to cleanse hair and strengthen its roots. Today we know that it is not true.

Maturation and rum. Good taste takes time: the rum matures for 18 months in oak barrels, similar to whiskey. Rum must be stored in oak barrels for at least 3 years in order to be called "old rum".
